Welcome to OUT THE BACK DOOR. We're about HOMESTEADING and the OUTDOOR LIFE.
I'll show you ways to make your life a little more simple and back to the basics. My goal is to use my life experience to help teach those that haven't been taught basic home skills. No, we're not off-grid at this point, but we try to be as self-sustainable as possible and we've planned to be ready if an emergency arises. We garden and forage for many of our foods. We hunt and fish to provide meat for our meals. And at times I'm out enjoying nature whether it's on my bike, kayak, snowshoes, hiking or just walking through the woods. Above all else, God comes first in my life... without Him, I would be nothing.

FLOOD UPDATE: 1.5 hours after the last video
We got another 2" of rain in 1 1/2 hours after the first flood video I posted. The ground is so saturated that many homes are experiencing flooded basements. Water was coming up through floor drains and up through the toilets. People that suffered hail damage to their roofs in the past week are now dealing with roofs that are leaking.
I thank God for His divine protection over us! 🙌 I also thank Him for the sunshine today as we have more rain in our forecast for several days.

Many areas are flooding! Tornadoes 🌪 have been accounted for in 2 local towns. We just had a Super Cell in Minnesota a couple of days ago with hail up to 3" in size. I'm praying for those that are out camping!

I water bath canned one batch of eggs and they turned dark and rubbery so I will never do that again unless there's a way to prevent the darkening and without changing the texture then I would water bath can them. If you have a suggestion how to prevent this problem or if you know what i may have done wrong i would love to hear it. Thank you.
Hi Elizabeth. If that works best for you, please stick with it! 👍 I've done the pickled eggs canned and in an unsealed jar put straight into the refrigerator and have noticed a slightly rubbery texture doing both methods after waiting 4 weeks to eat. Maybe I'll try a jar or two doing OCM to see if I notice that much more of a difference. 😊
Can you do jalapeño peppers the same way, minus the dill?
Hi Donald. That should work fine. Just make sure to do only 1 or 2 jars at time and that your brine is boiling when you pour it over your peppers. Place your lid and band on right away and set aside to work on more jars. 😊

I can tell you that once you use ghee you will not want to go without it. It is the most wonderful oil with a smoke point of 450 degrees +.

This is this way I have done them for years. I steam my eggs in a rice cooker, then put them in ice water. Crack the entire egg, put back in the cold water and leave for a few minutes. Then I peel them under the surface of cold water, drop the shell back in the bottom, after you are done, just gentle pour out the water, the shells usually stay in the bottom and then just throw away.

New subscriber! I’m trying this tomorrow! I just use Mrs. Wage’s packets but add hot peppers to the jars. Can you do this with bread and butter pickles? I’ve already made 2 batches of those, but I water-bathed them. I need shelf life pickles!
Hi Cynthia. Welcome to the channel! This should work with your bread and butter pickles. I have not tried that yet because I make a small batch for my husband, so maybe do a test batch on a couple of jars first. I prefer dill, myself. Heads up though... only do 1 or 2 jars at a time and make sure your brine is boiling when you pour it into the jars. Get the lids and bands on right away. Too many people have had seal failures because things cooled down to fast and the jars couldn't properly seal. If any of your jars don't seal within 24 hours, stick them in the refrigerator and enjoy eating them after 4 weeks. BTW, I've got open kettle pickles in my pantry that are almost 3 years old. 😊
My wife did everything you showed except she used pint jars instead of quarts. The jars didn't seal and after a day or two turned a whitish cloudy substance at the bottom of the jars. I had to throw them all out. We put one directly in the fridge and it's fine. what happened? Please help her.
Hi Larry. It sounds like things cooled down too much and the jars didn't seal. I had this happen when I was doing too many jars at one time and my brine wasn't at a boil any longer. Mine turned cloudy after about 5 days and they ended up in the compost. If a jar doesn't seal within 24 hours, put it in the refrigerator right away. Still wait 4 weeks to eat, but they will be ok. I should do an updated video explaining this so people don't run into seal failures. Only do 1 or 2 jars at a time and make sure your brine is boiling when you pour it over the cucumbers and place your lid and band on right away.

Ok I love canning in a pressure cooker, so my question is do the pickles get a good seal, how long are the shelf stable. I’m skiddish about them being safe and shelf stable. Recipe looks great, but I’m skeared, please advise and is there a recipe link?
Hi Heidi. Are you pressure canning in a pressure cooker or canner? It's not advisable to PC in a pressure cooker. This method dates back over 100 years. It's called open kettle method and is only recommended for preserves and pickled foods. If you try this, only do 1 or 2 jars at a time and make sure your brine is boiling when you pour it over the cucumbers and place your lid and bands on. I've got a couple of jars that are going on 3 years old in my pantry. As far as a recipe, I don't write them out. You can get the recipe while you watch the video. If you have any other questions, I'm here to help. 😊

Did you sterilized the jars?
Hi Iamthelightoftheworld. If you're processing for more than 10 minutes, it's not necessary to sterilize the jars. I do make sure they are very clean though. 😊
@@OuttheBackDoor hi my peach today blow up. What the reason for that? I thought its because i didn't sterilized the jars. I boiled it for like 50 minutes though
Two things may have happened. If you didn't de-bubble your jars or you didn't leave enough headspace. Also, did you mean you water bath canned the peaches for 50 minutes? Quarts only need to process 25 to 30 minutes.
Gonna try this this week….HOPEFULLY I WILL HAVE THE SAME CRUNCH, I hate soft pickles 🥒

You mentioned a video of bread and butter pickles. I found the one about refrigerator b & b pickles but want to make them in quantity for winter storage. Can this open kettle method be used for the bread and butter pickles also? Will the pickles vacuum seal with this method? What is their shelf life?

This is easy method, but one time could be good, next time not really.
So far mine have been good. Occasionally I'll get one that doesn't seal and it goes into the refrigerator. 😊
